Recession Entrepreneurs Invent Square Pies
Steven was in South Afica as a Peace Corps Volunteer. He ate a lot of the classic British meat pies and decided he could make them and make them better. Kristen Ribich, the co-owener of Squarz Pies lived in New Zealand as a child just like Steven. Growing up she loved meat pies also. Kristen took her love of flavors and exotic spices from other cultures and she and Steven have created something much more than a classic meat pie.
First, they are square or “Squarz.” Next, the people who’ve eaten them, including your reporter, say they taste great, are savory, spiced just right, are mouthwatering and delicious.
“It’s the pastry. It is incredibly light and flaky and buttery,” that’s a usual comment after tasting a sample at one of the many Farmers Markets that Steven and Kristen attend.
Variety is one of the main ingredients in these Squarz Pies. Steak Fajita, Steak, Spinach & Feta, Pepperoni Pizza, Chicken and Mushroom, Chicken, Breakfast, BBQ Pork, and to keep things sweet and in the great American tradition, Apple. The apple is the classic cinnamon, apples, sweet with that trademark flaky covering.
Steven and Kristen make their own “puff pastry” for the pie wraps. Classic puff pastry is made from folding pastry over and over, rolling it out, folding it over again, add butter, roll and fold…hundreds of times. The result is buttery, flaky, mouth watering crusty pastry wrapped around fillings with just the right amount of spices.
Here’s an important thing to know, they freeze these pies so you can take them home, put them in your freezer and then take them out, reheat when you want them.
Does the puff pastry stay crispy after being frozen? Absolutely yes.
Right now Steven and Kristen are selling at Farmers Markets in the Phoenix Valley. They want their customers to know what these squares of goodness will taste like after being thawed. So at the Farmers Markets they take the frozen samples, thaw them, heat them in a small stove and serve them up.
